Enigma is a sour that uses roasted and crystal malt in a mash for a dark colour and notes of mocha, burnt caramel, and raisin. Post fermentation, we aged Enigma for two months on fresh raspberries and juicy cherries to provide a zingy, fruity contrast to the chocolatey flavours from the malt.
