Brewed every September during hop harvest, call upon field of 300 hop plants to provide with their green hop goodness and use them both hot side during the brew, as well as later added directly to barrel to age. The 2022 version uses a mix of own organically grown Pilot & Goldings hops.
As the hop oils mellow and fade into the beer, the character continues to change. By ageing this beer a little longer than usual before release, the beer has further developed a level of funk and complexity with an almost riesling-like minerality and background notes of hay.
