Jam 2024 is a blend of barrels from March and May 2023, fermented with Saison yeast, Lactobacillus and Brettanomyces and aged for 9 months on Carbonically Macerated British Damsons.
Bright, refreshing acidity leads into the Jammy Hedgerow Berry fullness. The base brings wine-like structure from the fruit and wood. The funk is subtle and fruity with marzipan, light red wine and vanilla character filling the palate. The finish is refreshing damson skin dryness and spicy, woody notes.
