A collaboration with Lander Cardon
For this second edition of Lambic'ado, we visited Fernandez-Gao in Jerez de la Frontera. There, we personally selected Palo Cortado, Oloroso, and Amontillado casks, where or geuze was allowed to age for an additional season.
Lambic undergoes a transformation when allowed to age in beautiful oxidative wine casks. Each barre gently imparted its character to the lambic, making the blend complex and expressive. Sherry notes, robust structure, and aged wood.
