Fusing traditional styles and techniques with modern brewing advances is something that excites us at Balance for this beer we worked with Barthhaas to utilise spectrum. A liquid hop extract, that we used to dry hop a blend of barrel aged Saisons.
We got our hands on Ernest and Fuggle in spectrum form, two British hops that work wonderfully in our beers. There's a tropical punch of flavour, mango, pineapple and pomello carried on a base of subtly bready malt and the pithy bitterness of pine pollen.
