Inspired by the Belgian framboise style. Refermented base golden sour beer on 220G/L Scottish Tayberries harvested 12 miles from the brewery. Tayberries are a cross between raspberries and blackberries. Named after the River Tay, which runs through home of Dundee, where these berries were first bred.
This beer combines a blend of two golden sour beers, brewed with local Scottish Barley, Wheat and Oats, and fermented with multiple Brettanomyces and Bacteria strains. Whilst a framboise style is traditionally brewed with raspberries, decided to use local Tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma.
